Leaping Salmon

Scotland and salmon seem inextricably linked, and those scenes of an intrepid return upstream to spawning grounds of salmon arcing and leaping against powerful forces can be quite evocative.

Perhaps that is why I was recently drawn to a scene in Dumfries that would have both intrigued and delighted Juno and Bella. Succulent and crisped salmon gently arcing over an undercurrent of crispy vegetables and smooth mash…

Until we speak again, from here on in my favourite Scottish Salmon will be known as Teryaki! Yes, I know it should be accompanied by white wine; but the Australian Merlot was too difficult to resist.
